Buffalo’s culinary history is a reflection of its multiethnic roots. Europeans flocked to Buffalo and its booming economy after the opening of the Erie Canal. As enclaves of Polish, Italian, Irish, and German immigrants arrived, they brought with them their Old World traditions. Later, African Americans came to Buffalo during the Great Migration, and Latin Americans came to work at Buffalo’s steel industries. This continues to this day with Buffalo’s large immigrant and refugee populations.

After arriving at Ellis Island, many immigrants came to Buffalo on packet boats via the Erie Canal. They brought with them food traditions from their native countries.
